Ingredients for chicken:
- 1 lb boneless, skinless chicken breast
- 1/2 cup coconut milk
- 1 tbsp lime juice
- 1/2 tbsp of honey
- 1 tsp coconut aminos
- 1/2 tsp sesame oil
- 2 drops Lime Vitality Essential Oil
- Pinch of Salt
Ingredients for dipping sauce:
- 1/2 cup natural almond butter
- 1/2 Jalapeno
- 1 clove of garlic, minced
- 1/2 tsp fresh ginger
- 1/4 cup hot water
- 2 tbsp coconut aminos
- 2 tbsp coconut milk
- 1 tbsp lime juice
- 1 tsp sesame oil
- 1 tsp honey
- 1 drop Lime Vitality Essential Oil
- 1 drop Ginger Vitality Essential Oil
Directions
- Slice chicken into long thin strips and place in a shallow dish. Combine all other ingredients for chicken together in a medium mixing bowl, mix well, and pour over chicken. Let chill for at least one hour.
- While chicken is chilling, start preparing the dipping sauce. Put all ingredients into a blender and blend until smooth.
- After the chicken has chilled for one hour preheat grill or pan to high and cook chicken thoroughly for 5-10 minutes per side. Serve with dipping sauce.
